Cinnamon French Toast Casserole
Cubed brioche soaked in cinnamon custard, baked until puffed and golden — French toast for a crowd, with no standing at the stove.
Ingredients
- 1 loaf day-old brioche or challah, cubed (about 10 cups)
- 8 large eggs
- 2 cups whole milk
- ½ cup heavy cream
- ½ cup brown sugar
- 2 tsp ground cinnamon
- 1 tbsp vanilla extract
- ¼ tsp kosher salt
- 2 tbsp unsalted butter, for the dish
- ½ cup chopped pecans
- 2 tbsp granulated sugar
- ½ tsp ground cinnamon, for the topping
- 1 cup maple syrup, for serving
Steps
- Heat the oven to 350°F and butter a 9x13-inch baking dish.
- Whisk the eggs, milk, cream, brown sugar, 2 teaspoons cinnamon, vanilla and salt.
- Toss the bread cubes in the custard, then spread in the dish and press gently to soak.
- Mix the pecans, granulated sugar and remaining cinnamon and scatter over the top.
- Bake 40-45 minutes until puffed, golden and set in the center.
- Rest 10 minutes, then serve with warm maple syrup.
Serve with: warm maple syrup and fresh berries.
Day-old bread soaks up the custard without falling apart; fresh bread turns to mush.
