Maple-Bourbon Glazed Turkey
A sticky maple-bourbon glaze lacquered over the classic roast — sweet, smoky and deeply browned, with a bourbon note that cooks off in the oven.
Ingredients
- 1 whole turkey (12–14 lb), thawed, giblets removed
- ½ cup unsalted butter, softened
- 2 tsp kosher salt
- 1 tsp black pepper
- 1 tbsp fresh thyme leaves
- ¾ cup pure maple syrup
- ¼ cup bourbon
- 2 tbsp Dijon mustard
- 1 tbsp apple cider vinegar
- 2 tbsp brown sugar
- 1 onion, quartered
- 1 orange, halved
Steps
- Heat the oven to 325°F. Pat the turkey completely dry, inside and out — dry skin is crisp skin.
- Rub the turkey all over with the softened butter, then season with the salt, pepper and thyme.
- Fill the cavity with the onion and orange halves. Tie the legs and tuck the wings.
- Whisk the maple syrup, bourbon, mustard, vinegar and brown sugar into a smooth glaze.
- Roast on a rack, breast up, for 2 hours. Brush with the glaze every 30 minutes during the last hour of roasting.
- It is done when a thermometer in the thickest part of the thigh reads 175°F and the breast reads 165°F — about 3 to 3¾ hours total. Tent with foil if the glaze darkens too fast.
- Rest 30 minutes before carving. Warm the leftover glaze and spoon it over the slices.
Serve with: mashed sweet potatoes, sausage stuffing and a tart cranberry sauce.
Bourbon's alcohol cooks off, leaving a smoky caramel note — for an alcohol-free version, swap in apple juice. Glaze only in the last hour: the maple sugars burn if brushed on too early.
