Classic Eggs Benedict
Toasted muffins, Canadian bacon, poached eggs and silky hollandaise — the brunch classic, made calmly at home.
Ingredients
- 4 English muffins, split
- 8 large eggs
- 8 slices Canadian bacon
- 3 egg yolks
- 1 tbsp lemon juice
- ½ cup unsalted butter, melted and warm
- 1 tsp white vinegar
- ½ tsp kosher salt
- ¼ tsp black pepper
- 1 pinch cayenne pepper
- 2 tbsp fresh chives, chopped
Steps
- Make the hollandaise: whisk the yolks and lemon juice in a heatproof bowl over simmering water until thick and pale, about 2 minutes.
- Drizzle in the warm melted butter very slowly, whisking constantly, until thick and glossy. Season with salt, pepper and cayenne. Keep warm.
- Toast the English muffins until golden.
- Brown the Canadian bacon in a dry skillet, about 1 minute per side.
- Poach the eggs: simmer water with the vinegar, swirl, and slip in the eggs. Cook 3-4 minutes until the whites are set and the yolks are runny.
- Build each plate with a muffin half, bacon, a poached egg and a generous spoon of hollandaise. Scatter with chives.
Serve with: fresh fruit and crispy hash browns.
Keep the hollandaise warm, not hot — too much heat will split it, and a splash of warm water brings it back.
