Shrimp Fajitas
Sizzling shrimp, peppers and onions with chili-lime seasoning — a one-skillet fajita night that is on the table in 25 minutes.
Ingredients
- 1½ lb large shrimp, peeled and deveined
- 1 tsp chili powder
- 1 tsp smoked paprika
- 1 tsp ground cumin
- ¾ tsp kosher salt
- 2 tbsp olive oil, divided
- 2 bell peppers (mixed colors), sliced
- 1 red onion, sliced
- 2 tbsp lime juice
- 8 flour tortillas, warmed
Steps
- Toss the shrimp with chili powder, paprika, cumin and salt.
- Sear the shrimp in 1 tbsp olive oil over high heat, 2 minutes per side until pink. Remove and set aside.
- In the same skillet, cook the peppers and onion in the remaining oil over high heat for 5-6 minutes until charred at the edges but still crisp.
- Return the shrimp to the pan, add the lime juice and toss 1 minute to combine.
- Serve sizzling with warm tortillas and toppings.
Serve with: warm flour tortillas, sour cream, guacamole and lime wedges.
A screaming-hot pan is what makes fajita vegetables char instead of steam — do not crowd the skillet, cook in batches if needed.
