Turkey and Sweet Potato Skillet
One skillet, no fuss: lean turkey, sweet potatoes and black beans simmered with warm spices until everything is tender.
Ingredients
- 1 lb ground turkey
- 2 sweet potatoes, peeled and diced
- 1 red bell pepper, diced
- 1 small red onion, diced
- 2 garlic cloves, minced
- 1 tbsp olive oil
- 1 tsp chili powder
- 1 tsp ground cumin
- ½ tsp smoked paprika
- ½ tsp kosher salt
- ¼ tsp black pepper
- 1 cup black beans, drained and rinsed
- ½ cup chicken broth
- ¼ cup fresh cilantro, chopped
- 1 lime, cut into wedges
Steps
- Heat the olive oil in a large skillet over medium-high heat and brown the turkey, breaking it up, about 5 minutes.
- Add the onion, bell pepper and garlic and cook 3 minutes until softened.
- Stir in the chili powder, cumin, paprika, salt and pepper and cook 30 seconds until fragrant.
- Add the sweet potatoes, black beans and chicken broth. Bring to a simmer, cover and cook 20-25 minutes until the potatoes are tender.
- Uncover and cook 2-3 minutes more to thicken the pan juices.
- Scatter with cilantro and serve with lime wedges.
Serve with: lime wedges and a dollop of Greek yogurt.
Cut the sweet potatoes small and even so they cook through in the same time as the turkey.
