Asian Chicken Salad
Crunchy cabbage, seared chicken, mandarin oranges and a sesame-ginger dressing — sweet, salty, tangy and very filling.
Ingredients
- 2 boneless, skinless chicken breasts (about 1 lb total)
- 1 tsp kosher salt
- ½ tsp black pepper
- 1 tbsp vegetable oil
- 4 cup shredded napa or green cabbage
- 2 cup shredded carrots
- 1 cup mandarin orange segments, drained
- ½ cup sliced almonds, toasted
- ½ cup crispy wonton strips or chow mein noodles
- 3 tbsp soy sauce
- 2 tbsp rice vinegar
- 2 tbsp sesame oil
- 1 tbsp honey
- 1 tsp fresh ginger, grated
Steps
- Season the chicken with salt and pepper. Sear in vegetable oil in a skillet over medium-high heat, 5-6 minutes per side, until cooked through to 165°F. Rest 5 minutes, then slice.
- Whisk the soy sauce, rice vinegar, sesame oil, honey and ginger into a dressing.
- Toss the cabbage, carrots and mandarin oranges with most of the dressing.
- Top with sliced chicken, almonds and wonton strips, drizzle with the remaining dressing and serve.
Serve with: egg rolls, wonton chips or a bowl of rice on the side.
Keep the wonton strips out of the bowl until serving — they lose their crunch within minutes of touching dressing.
