Beef and Pepper Stir-Fry
Thin-sliced beef, charred peppers and a glossy soy glaze — faster than takeout and built for a hot wok or skillet.
Ingredients
- 1 lb flank steak, sliced thin against the grain
- 2 bell peppers, sliced (mixed colors)
- 1 onion, sliced
- 3 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 3 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tbsp cornstarch
- 2 tbsp vegetable oil
- ½ tsp black pepper
- 2 green onions, sliced
Steps
- Toss the beef with the cornstarch, 1 tablespoon of the soy sauce and the black pepper.
- Heat the vegetable oil in a wok or large skillet over high heat until just smoking.
- Sear the beef in a single layer, 1-2 minutes per side. Remove to a plate.
- Add the peppers, onion, garlic and ginger and stir-fry 2-3 minutes until crisp-tender.
- Return the beef and add the remaining soy sauce, oyster sauce, rice vinegar and sesame oil. Toss 1 minute until glossy.
- Scatter with green onions and serve at once.
Serve with: steamed jasmine rice.
Slice the beef thin and against the grain, and do not crowd the pan — space is what gives you a sear instead of a steam.
