Blueberry Baked Oatmeal
A sliceable, cake-like oatmeal studded with blueberries — bake once, reheat all week for easy mornings.
Ingredients
- 2 cup rolled oats
- 1½ cup milk
- 2 eggs
- ⅓ cup maple syrup
- 2 tbsp melted butter
- 1 tsp baking powder
- 1 tsp vanilla extract
- ½ tsp ground cinnamon
- ¼ tsp kosher salt
- 1½ cup fresh or frozen blueberries
Steps
- Heat the oven to 375°F and grease an 8-inch square baking dish.
- Whisk the milk, eggs, maple syrup, melted butter and vanilla.
- Stir in the oats, baking powder, cinnamon and salt, then fold in the blueberries.
- Pour into the dish and bake 35 minutes, until set in the center and golden at the edges.
- Cool 10 minutes before slicing into squares.
Serve with: Serve warm with a pour of milk or a dollop of Greek yogurt.
Frozen blueberries work straight from the freezer — do not thaw them first, or the batter turns purple.
