Pasta with Cherry Tomatoes and Basil
Sweet burst tomatoes, garlic and fresh basil tossed with spaghetti — summer in a bowl, in twelve minutes.
Ingredients
- 12 oz spaghetti
- 2 cups cherry tomatoes, halved
- 3 garlic cloves, sliced
- ¼ cup olive oil
- ½ tsp red pepper flakes
- 1 cup fresh basil leaves
- ½ cup grated parmesan
- 1 tsp kosher salt
Steps
- Cook the spaghetti in salted water until al dente; save a cup of the pasta water.
- Warm the olive oil with the garlic and red pepper flakes until fragrant, about 1 minute.
- Add the cherry tomatoes and cook 5-6 minutes until they burst and turn saucy.
- Toss the pasta into the pan with a splash of pasta water until coated.
- Stir in the basil and parmesan off the heat and serve.
Serve with: shaved parmesan and crusty bread.
Let the tomatoes burst in the pan; their juices are the sauce.
