Classic Minestrone
The Italian pantry soup: beans, small pasta and vegetables in a tomato broth that gets better the next day.
Ingredients
- 2 tbsp olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 1 14-oz can diced tomatoes
- 6 cup vegetable stock
- 1 15-oz can cannellini beans, drained and rinsed
- 1 cup small pasta (ditalini or small shells)
- 2 cup green beans, cut in 1-inch pieces
- 2 cup baby spinach
- 1 tsp dried oregano
- 1 tsp kosher salt
- ½ tsp black pepper
Steps
- Heat the olive oil in a large pot over medium heat. Cook the onion, carrots and celery until softened, about 6 minutes.
- Add the garlic and oregano and cook 1 minute.
- Pour in the tomatoes and stock, scraping up any browned bits. Add salt and pepper.
- Simmer 20 minutes. Add the beans, green beans and pasta.
- Cook 10–12 minutes more until the pasta is tender.
- Stir in the spinach until wilted. Rest 5 minutes and serve with Parmesan.
Serve with: grated Parmesan and garlic bread.
A Parmesan rind simmered with the soup (removed before serving) adds a deep savory note for free.
