Creamy Mushroom Soup
Earthy mushrooms, a splash of cream and a silky blend — the from-scratch soup that makes the canned version unthinkable.
Ingredients
- 1½ lb cremini mushrooms, sliced
- 1 onion, diced
- 2 garlic cloves, minced
- 4 cups vegetable or chicken broth
- 1 cup heavy cream
- 2 tbsp unsalted butter
- 1 tbsp olive oil
- 1 tbsp all-purpose flour
- 1 tsp fresh thyme leaves
- ½ tsp kosher salt
- ¼ tsp black pepper
- 2 tbsp fresh parsley, chopped
Steps
- Melt the butter with the olive oil in a large pot over medium-high heat.
- Brown the mushrooms in batches, 4-5 minutes per batch, until deep golden. Remove to a plate.
- Soften the onion and garlic in the same pot, about 4 minutes.
- Stir in the flour and cook 1 minute, then pour in the broth, scraping the bottom.
- Return the mushrooms with the thyme, salt and pepper. Simmer 15 minutes.
- Blend until smooth, stir in the cream and warm through without boiling.
- Serve scattered with parsley.
Serve with: toasted sourdough and a drizzle of truffle oil.
Brown the mushrooms in batches without crowding the pan — crowded mushrooms steam, and steamed mushrooms never get that deep flavor.
