Classic Chicken Noodle Soup
The comfort classic: tender chicken, soft carrots and egg noodles in a clear, golden broth that tastes like it simmered all day.
Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 3 carrots, sliced
- 2 celery stalks, sliced
- 3 garlic cloves, minced
- 8 cup chicken stock
- 1½ lb boneless chicken breasts or thighs
- 2 tsp kosher salt
- ½ tsp black pepper
- 2 cup wide egg noodles
- 2 tbsp fresh parsley, chopped
Steps
- Heat the olive oil in a large pot over medium heat. Cook the onion, carrots and celery until softened, about 6 minutes.
- Add the garlic and cook 1 minute until fragrant.
- Pour in the chicken stock and add the chicken, salt and pepper. Bring to a gentle simmer.
- Cover and simmer 15 minutes, until the chicken is cooked through (165°F).
- Lift the chicken out, shred it with two forks and return it to the pot.
- Add the noodles and cook 6–8 minutes until tender. Stir in the parsley and serve.
Serve with: crusty bread and a simple green salad.
Cook noodles separately if you plan leftovers — noodles left in the pot soak up the broth overnight.
