French Onion Soup
Patience is the whole recipe: deeply caramelized onions, good beef stock and a bubbling Gruyère cap make the bistro classic.
Ingredients
- 3 tbsp butter
- 1 tbsp olive oil
- 3 lb yellow onions, thinly sliced
- 1 tsp kosher salt
- ½ tsp black pepper
- 1 tsp sugar
- 2 tbsp all-purpose flour
- 6 cup beef stock
- ½ cup dry white wine
- 1 tbsp fresh thyme leaves
- 4 thick slices of baguette, toasted
- 1½ cup Gruyère cheese, grated
Steps
- Melt the butter with the olive oil in a large heavy pot over medium heat. Add the onions and salt.
- Cook, stirring often, 30–40 minutes until the onions are deep golden brown. Add the sugar halfway if they are browning slowly.
- Sprinkle in the flour and stir 1 minute. Pour in the wine, scraping up the browned bits.
- Add the beef stock, pepper and thyme. Simmer 20 minutes.
- Heat the broiler. Ladle the soup into oven-safe bowls, top each with a baguette slice and a generous handful of Gruyère.
- Broil 2–4 minutes until the cheese is bubbling and spotted brown. Serve immediately, warning everyone the bowls are hot.
Serve with: a crisp green salad to cut the richness.
Do not rush the onions on high heat — burnt onion tastes bitter, while slow caramelization tastes sweet and deep.
