Potato Leek Soup
Five ingredients, 30 minutes, and a silky soup that tastes far fancier than it is — the quiet workhorse of soup season.
Ingredients
- 2 tbsp butter
- 3 leeks, white and light green parts only, sliced and rinsed well
- 2 garlic cloves, minced
- 1½ lb Yukon Gold potatoes, peeled and diced
- 4 cup vegetable or chicken stock
- 1 tsp kosher salt
- ½ tsp black pepper
- ½ cup heavy cream (optional)
- 2 tbsp fresh chives, snipped
Steps
- Melt the butter in a large pot over medium heat. Cook the leeks until soft, about 5 minutes, then add the garlic for 1 minute.
- Add the potatoes, stock, salt and pepper. Bring to a simmer.
- Cook 15–18 minutes until the potatoes fall apart when pressed with a spoon.
- Blend until completely smooth with an immersion blender, or in batches with the lid vented.
- Stir in the cream if using and warm through. Adjust the salt.
- Serve topped with chives and a drizzle of olive oil.
Serve with: crusty bread and a drizzle of good olive oil.
Rinse sliced leeks in a colander under running water — grit hides between the layers and no one wants a sandy soup.
