Hearty Lentil Soup
Cheap, filling and deeply flavored: brown lentils, carrots and cumin simmer into a soup that feeds a crowd for almost nothing.
Ingredients
- 2 tbsp olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 2 cup brown or green lentils, rinsed
- 1 14-oz can diced tomatoes
- 6 cup vegetable stock
- 1 tsp kosher salt
- ½ tsp black pepper
- 1 lemon, juiced
Steps
- Heat the olive oil in a large pot over medium heat. Cook the onion, carrots and celery until softened, about 6 minutes.
- Add the garlic, cumin and smoked paprika and stir 1 minute.
- Add the lentils, tomatoes and stock. Bring to a boil, then reduce to a gentle simmer.
- Cover partially and cook 30–35 minutes until the lentils are tender but not mushy.
- Season with salt, pepper and lemon juice.
- Serve hot, with yogurt or feta if you like.
Serve with: crusty bread and a spoonful of yogurt or feta.
Salt lentils at the end, not the start — early salt can keep the skins tough and slow the cooking.
