Broccoli Cheddar Soup
Thick, cheesy and ready in 30 minutes: the soup-shop favorite, made at home with real cheddar and no processed cheese.
Ingredients
- 4 tbsp butter
- 1 onion, diced
- 2 garlic cloves, minced
- ¼ cup all-purpose flour
- 2 cup whole milk
- 2 cup vegetable or chicken stock
- 4 cup broccoli florets, chopped small
- 1 cup carrot, grated
- 2 cup sharp cheddar cheese, grated
- 1 tsp kosher salt
- ½ tsp black pepper
Steps
- Melt the butter in a large pot over medium heat. Cook the onion until soft, about 4 minutes, then add the garlic for 1 minute.
- Whisk in the flour and cook 1 minute to remove the raw flour taste.
- Whisk in the milk and stock a little at a time until smooth. Bring to a gentle simmer.
- Add the broccoli and carrot. Simmer 12–15 minutes until the broccoli is tender.
- Take the pot off the heat. Stir in the cheddar a handful at a time until melted and smooth.
- Season with salt and pepper and serve hot.
Serve with: crusty bread or in a bread bowl.
Always add cheese off the heat — boiling a cheese soup makes it grainy and can split the sauce.
