Creamy Tomato Soup
The most-searched soup for a reason: sweet canned tomatoes, a little garlic and a swirl of cream turn into dinner in 30 minutes.
Ingredients
- 2 tbsp olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 28-oz cans crushed tomatoes
- 2 cup vegetable stock
- 1 tsp sugar
- 1 tsp kosher salt
- ½ tsp black pepper
- ½ cup heavy cream
- ¼ cup fresh basil leaves, torn
Steps
- Heat the olive oil in a large pot over medium heat. Cook the onion until soft, about 5 minutes, then add the garlic and cook 1 minute more.
- Pour in the crushed tomatoes and vegetable stock. Add the sugar, salt and pepper.
- Simmer gently for 15 minutes, stirring occasionally.
- Blend the soup smooth with an immersion blender, or in batches in a standing blender with the lid vented.
- Stir in the cream and warm through without boiling. Taste and adjust the salt.
- Serve topped with torn basil.
Serve with: grilled cheese sandwiches and fresh basil leaves.
If the tomatoes taste sharp, add another pinch of sugar rather than more salt — acid is usually the problem.
