Gingerbread Cookies

Soft in the middle, crisp at the edges, and spiced enough to smell like December: the cookie that decorates the tree and the table.

Ingredients

  • 3 cup all-purpose flour
  • 1 tsp baking soda
  • 1 tbsp ground ginger
  • 1 tsp ground cinnamon
  • ½ tsp ground cloves
  • ¼ tsp kosher salt
  • ¾ cup unsalted butter, softened
  • ¾ cup brown sugar, packed
  • ½ cup molasses
  • 1 egg
  • 1 tsp vanilla extract

Steps

  1. Whisk the flour, baking soda, ginger, cinnamon, cloves and salt together.
  2. Beat the butter and brown sugar until fluffy, about 2 minutes. Beat in the molasses, egg and vanilla.
  3. Mix in the dry ingredients until a soft dough forms. Divide in half, flatten into disks, wrap and chill 1 hour — this chilling time is included in the prep time above.
  4. Heat the oven to 350°F. Roll the dough 0.25 inch thick on a floured surface and cut shapes.
  5. Bake on lined sheets 10–12 minutes until the edges are set but the centers still look soft.
  6. Cool 5 minutes on the pan, then move to a rack. Decorate once completely cool.
Serve with: hot cocoa or a glass of cold milk.

Chilled dough holds its shape — warm dough spreads into blobs. If the kitchen is warm, chill the cut shapes 10 minutes before baking.
