Bacon Brussels Sprouts
The sprout dish that converts skeptics: halved sprouts roasted cut-side down until crisp, tossed with smoky bacon and a splash of balsamic.
Ingredients
- 1½ lb Brussels sprouts, trimmed and halved
- 4 slices bacon, chopped
- 2 tbsp olive oil
- 1 tsp kosher salt
- ½ tsp black pepper
- 1 tbsp balsamic vinegar
- 1 tbsp honey (optional)
Steps
- Heat the oven to 425°F. Toss the sprouts with olive oil, salt and pepper.
- Spread them cut-side down on a sheet pan and scatter the bacon over the top.
- Roast 20–25 minutes until the sprouts are tender and deeply browned on the cut side and the bacon is crisp.
- Drizzle with balsamic and honey if using, toss and serve hot.
Serve with: roast ham or prime rib and mashed potatoes.
Cut-side down is the whole trick — flat contact with the hot pan is what makes sprouts caramelize instead of steam.
