Brown Sugar Glazed Ham
A spiral ham is already cooked, so the job is just a sticky brown-sugar and mustard glaze and a hot finish that caramelizes the edges.
Ingredients
- 1 spiral-sliced bone-in ham (about 9 lb)
- 1 cup brown sugar, packed
- ¼ cup Dijon mustard
- ¼ cup honey
- 2 tbsp apple cider vinegar
- ½ tsp ground cloves
- ½ cup pineapple juice or water, for the pan
Steps
- Heat the oven to 325°F. Place the ham cut-side down in a roasting pan and pour the juice or water into the pan.
- Cover tightly with foil and bake about 10 minutes per pound (roughly 1.5 hours for a 9 lb ham), until warmed to 130°F in the center.
- Meanwhile, whisk the brown sugar, mustard, honey, vinegar and cloves into a thick glaze.
- Uncover the ham, brush it generously with glaze and return it to the oven.
- Bake 20–30 minutes more, brushing with glaze every 10 minutes, until the surface is sticky and caramelized and the center reads 140°F.
- Rest 15 minutes before serving, spooning pan juices over the slices.
Serve with: scalloped potatoes, green beans and dinner rolls.
Do not skip the foil stage — an uncovered ham dries out long before the glaze ever caramelizes.
