Chocolate Yule Log
The classic Bûche de Noël: a light chocolate sponge rolled around whipped cream and cloaked in chocolate ganache, scored to look like bark.
Ingredients
- 4 eggs, separated
- ¾ cup granulated sugar
- ½ cup all-purpose flour
- ¼ cup cocoa powder
- 1 tsp baking powder
- ¼ tsp kosher salt
- 1½ cup heavy cream
- 2 tbsp powdered sugar, plus more for dusting
- 1 tsp vanilla extract
- 1 cup dark chocolate chips
- ½ cup heavy cream, for the ganache
Steps
- Heat the oven to 350°F. Line a 10×15-inch jelly-roll pan with parchment and grease it lightly.
- Beat the egg yolks with the sugar until pale and thick. Whisk in the flour, cocoa, baking powder and salt.
- Beat the egg whites with the salt until stiff peaks form, then fold them gently into the batter in two additions.
- Spread the batter evenly in the pan and bake 12–15 minutes until the top springs back.
- Turn the hot cake onto a clean kitchen towel dusted with powdered sugar, peel off the parchment and roll it up in the towel. Cool completely rolled — this trains the shape.
- Whip the cream with powdered sugar and vanilla. Unroll the cake, spread with cream and roll it back up without the towel.
- Heat the ganache cream until steaming, pour over the chocolate chips, rest 2 minutes and stir smooth. Spread over the log, score lines with a fork for bark, and dust with powdered sugar.
Serve with: lightly sweetened whipped cream and a dusting of powdered sugar snow.
Roll the sponge while it is hot, or it will crack later. A few small cracks are fine — the ganache hides them.
