Green Bean Casserole
The classic from scratch: crisp-tender green beans in a creamy mushroom sauce, baked under a crunchy fried-onion topping.
Ingredients
- 1½ lb fresh green beans, trimmed and halved
- 2 tbsp unsalted butter
- 8 oz cremini mushrooms, sliced
- 2 garlic cloves, minced
- 2 tbsp all-purpose flour
- 1 cup whole milk
- ½ cup heavy cream
- 1 tsp soy sauce
- ½ tsp black pepper
- ½ tsp kosher salt
- 1½ cup crispy fried onions
Steps
- Heat the oven to 375°F. Blanch the beans in boiling salted water for 3 minutes, then drain.
- Melt the butter in a large skillet. Cook the mushrooms until browned, about 5 minutes, then add the garlic for 1 minute.
- Stir in the flour and cook 1 minute. Slowly whisk in the milk and cream and simmer until thickened, about 3 minutes.
- Stir in the soy sauce, pepper and salt. Fold in the beans.
- Pour into a baking dish and bake 20 minutes until bubbling.
- Top with the crispy fried onions and bake 5–10 minutes more until golden.
Serve with: roast turkey, prime rib or ham — it belongs next to any holiday main.
Fresh beans stay crisp-tender; if you use frozen beans, thaw and drain them well first or the sauce will thin out. The casserole can be assembled a day ahead — add the onions just before baking.
