Christmas Prime Rib
The Christmas centerpiece: a bone-in rib roast with a garlic-herb crust, roasted low and slow, then blasted hot for a crisp exterior.
Ingredients
- 1 bone-in prime rib roast (about 8 lb)
- 4 tbsp softened butter
- 6 garlic cloves, minced
- 2 tbsp fresh rosemary, chopped
- 2 tbsp fresh thyme leaves
- 2 tsp kosher salt
- 1 tsp black pepper
- 1 tbsp olive oil
Steps
- Take the roast out of the fridge 1–2 hours before cooking so it loses the chill. Pat it very dry.
- Heat the oven to 250°F. Mix the butter, garlic, rosemary, thyme, salt and pepper into a paste and rub it all over the roast.
- Place the roast bone-side down in a roasting pan. Roast about 3 hours, until a thermometer in the center reads 120°F for medium-rare.
- Remove the roast, tent loosely with foil and rest 30 minutes. The temperature will rise to about 130°F.
- Raise the oven to 500°F. Uncover the roast and return it for 8–10 minutes until the crust is deep brown and crisp.
- Rest 10 minutes more, then carve between the bones and slice.
Serve with: horseradish cream, Yorkshire puddings and roasted potatoes.
The low oven is forgiving, but the thermometer is not optional — 10 degrees is the difference between medium-rare and medium.
