Herb-Crusted Baked Chicken Tenders
Crisp without the fryer: almond flour and panko bake into a golden herb crust over juicy chicken tenders.
Ingredients
- 1½ chicken tenders (about 1.5 lb)
- 1 cup panko breadcrumbs
- ½ cup almond flour
- ¼ cup grated parmesan
- 1 tsp garlic powder
- 1 tsp paprika
- ½ tsp kosher salt
- ½ tsp black pepper
- 2 eggs, beaten
- 1 olive oil spray
Steps
- Heat the oven to 425°F. Line a sheet pan with parchment and set a wire rack on top if you have one.
- Mix the panko, almond flour, parmesan, garlic powder, paprika, salt and pepper in a shallow bowl.
- Pat the tenders dry. Dip each one in the beaten egg, then press into the crumb mixture to coat all sides.
- Arrange on the rack or pan without crowding. Spray lightly with olive oil.
- Bake 18–20 minutes, turning once halfway, until golden and the thickest tender reads 165°F.
- Rest 5 minutes before serving so the crust sets.
Serve with: a big green salad, roasted broccoli and honey mustard for dipping.
Crumb sticks best when the tenders are patted very dry first. For extra crunch, toast the panko in a dry pan for 2 minutes before breading.
