Teriyaki Salmon

Salmon fillets glazed in a sticky homemade teriyaki — sweet, salty and glossy, with a sauce that comes together in the same pan.

Ingredients

  • 1½ lb salmon fillets, skin on or off
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • 1 tbsp vegetable oil
  • ⅓ cup soy sauce
  • ¼ cup mirin
  • 2 tbsp brown sugar
  • 1 tbsp grated fresh ginger
  • 2 garlic cloves, minced
  • 1 tsp cornstarch mixed with 1 tbsp cold water

Steps

  1. Season the salmon with salt and pepper. Sear skin-side down in oil over medium-high heat for 4 minutes, flip and cook 2 minutes more. Remove and set aside.
  2. In the same pan, combine the soy sauce, mirin, brown sugar, ginger and garlic. Simmer 2 minutes.
  3. Whisk in the cornstarch slurry and simmer 1 minute until the glaze thickens and turns glossy.
  4. Return the salmon to the pan, spoon glaze over each fillet and cook 1-2 minutes until it reads 125-130°F for silky salmon (145°F per USDA).
  5. Serve over rice with the extra glaze spooned on top.
Serve with: steamed rice, broccoli and sesame seeds.

Teriyaki glaze burns fast because of the sugar — keep the heat at medium once the sauce goes in and watch it closely.
