Cobb Salad
Rows of chicken, bacon, egg, avocado, tomato and blue cheese over greens — a composed salad that eats like a full dinner.
Ingredients
- 8 cup mixed greens or chopped romaine
- 2 cup cooked chicken, diced (rotisserie works well)
- 6 bacon slices, cooked crisp and crumbled
- 3 hard-boiled eggs, chopped
- 2 ripe avocados, diced
- 1 cup cherry tomatoes, halved
- ¾ cup blue cheese, crumbled
- ¼ cup olive oil
- 2 tbsp red wine vinegar
- 1 tsp Dijon mustard
- ½ tsp kosher salt
- ¼ tsp black pepper
Steps
- Spread the greens over a large platter or in a wide bowl.
- Arrange the chicken, bacon, eggs, avocado, tomatoes and blue cheese in neat rows over the greens.
- Whisk the olive oil, vinegar, Dijon, salt and pepper into a vinaigrette.
- Serve the dressing on the side, or drizzle it over the top just before serving and toss at the table.
Serve with: crusty bread or garlic toast and a light vinaigrette on the side.
Rotisserie chicken and pre-cooked bacon turn Cobb into a 20-minute assembly job with no extra cooking.
