Spinach Strawberry Salad
Sweet strawberries, baby spinach, feta and candied pecans under a balsamic vinaigrette — the spring salad that shows up at every potluck for a reason.
Ingredients
- 6 cup baby spinach
- 2 cup fresh strawberries, hulled and sliced
- ½ cup feta cheese, crumbled
- ½ cup candied pecans or toasted pecans, chopped
- ¼ red onion, thinly sliced
- ¼ cup olive oil
- 2 tbsp balsamic vinegar
- 1 tbsp honey
- 1 tsp Dijon mustard
- ½ tsp kosher salt
Steps
- Whisk the olive oil, balsamic vinegar, honey, Dijon and salt into a vinaigrette.
- Combine the spinach, strawberries, feta, pecans and red onion in a large bowl.
- Drizzle with dressing just before serving and toss gently so the berries stay intact.
Serve with: grilled chicken or salmon, or as a bright side to roast pork.
Dress at the last minute: spinach wilts fast, and this salad is at its best in the first 10 minutes after dressing.
