Greek Salad
Tomatoes, cucumber, red onion, olives and salty feta under a lemon-oregano dressing — no lettuce needed, and better after 10 minutes of marinating.
Ingredients
- 4 ripe tomatoes, cut into wedges
- 1 cucumber, halved and sliced
- 1 red onion, thinly sliced
- 1 cup Kalamata olives, pitted
- 1 cup feta cheese, crumbled or in a block
- ¼ cup extra-virgin olive oil
- 2 tbsp red wine vinegar
- 1 tsp dried oregano
- ½ tsp kosher salt
- ½ tsp black pepper
Steps
- Combine the tomatoes, cucumber, red onion and olives in a large bowl.
- Whisk the olive oil, vinegar, oregano, salt and pepper.
- Pour the dressing over the vegetables and toss gently.
- Top with the feta, let stand 10 minutes so the tomatoes release their juices into the dressing, and serve.
Serve with: grilled chicken, lamb or fish, warm pita and hummus.
Use the ripest tomatoes you can find — in a salad with so few ingredients, the tomato does most of the work.
