Grilled Shrimp Skewers
Smoky, charred shrimp on skewers with a simple garlic-lime marinade — the fastest grill dinner, ready before the coals even settle.
Ingredients
- 1½ lb large shrimp, peeled and deveined, tails on
- 3 tbsp olive oil
- 3 garlic cloves, minced
- 1 tbsp lime juice
- 1 tsp lime zest
- 1 tsp smoked paprika
- ¾ tsp kosher salt
- ¼ tsp black pepper
Steps
- Toss the shrimp with olive oil, garlic, lime juice and zest, paprika, salt and pepper. Marinate 15 minutes (no longer — the lime starts to cook the shrimp).
- Thread onto skewers, 4-5 shrimp per skewer.
- Grill over medium-high heat 2-3 minutes per side until pink, opaque and lightly charred.
- Rest 2 minutes and serve with lime wedges.
Serve with: grilled vegetables, rice and chimichurri or cocktail sauce.
Soak wooden skewers in water for 30 minutes first, or they will scorch on the grill.
