Sesame Seared Tuna Steak
Sushi-grade tuna crusted in sesame, seared 60-90 seconds a side so the center stays rosy — restaurant tuna at home in under 20 minutes.
Ingredients
- 1½ lb sushi-grade tuna steaks, about 1 inch thick
- ½ cup sesame seeds (white and black mixed)
- 1 tsp kosher salt
- ½ tsp black pepper
- 2 tbsp high-heat oil (avocado or canola)
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp grated fresh ginger
Steps
- Pat the tuna dry and season with salt and pepper. Press all sides firmly into the sesame seeds.
- Heat the oil in a cast-iron or stainless skillet over high heat until just smoking.
- Sear the tuna 60-90 seconds per side — the crust should be golden while the center stays pink.
- Rest 2 minutes, then slice thinly against the grain.
- Whisk the soy sauce, rice vinegar and ginger for dipping, and serve.
Serve with: rice, edamame, cucumber salad and soy-ginger dipping sauce.
Only use sushi-grade tuna for a rare center. If your tuna is not sushi-grade, cook it fully through to 145°F instead.
