Lemon Garlic Shrimp Pasta
Garlicky shrimp, bright lemon and a silky white-wine sauce tossed with spaghetti — light, fast and hard to stop eating.
Ingredients
- 12 oz spaghetti
- 1 lb large shrimp, peeled and deveined
- 3 tbsp olive oil
- 4 garlic cloves, thinly sliced
- ½ tsp red pepper flakes
- ½ cup dry white wine
- 2 tbsp lemon juice
- 1 tsp lemon zest
- 2 tbsp unsalted butter
- ½ tsp kosher salt
- ¼ tsp black pepper
- ¼ cup fresh parsley, chopped
Steps
- Cook the spaghetti in salted water until al dente. Reserve 1 cup of pasta water, then drain.
- Season the shrimp with salt and pepper. Sear in olive oil over medium-high heat, 1-2 minutes per side, until pink. Remove to a plate.
- Lower the heat and soften the garlic and red pepper flakes in the same pan for 1 minute.
- Pour in the wine and lemon juice, scraping up the browned bits, and simmer 2 minutes.
- Swirl in the butter, then return the shrimp and add the spaghetti with a splash of pasta water.
- Toss until glossy, stir in the lemon zest and parsley, and serve at once.
Serve with: crusty bread and a crisp green salad.
Shrimp cook in minutes — pull them the moment they curl into a C; a tight O means they are overdone.
