Roasted Veggie Tofu Bowl
Crisp-edged tofu and caramelized vegetables over rice, with a savory glaze that makes tofu taste like the main event.
Ingredients
- 1 block extra-firm tofu (14 oz), pressed and cubed
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp cornstarch
- 1 broccoli head, cut into florets
- 1 red bell pepper, chopped
- 1 red onion, wedged
- 2 tbsp olive oil
- 1 tsp kosher salt
- 2 cup cooked brown rice
- 2 tbsp hoisin sauce
- 1 tsp rice vinegar
Steps
- Heat the oven to 425°F. Toss the tofu with soy sauce, sesame oil and cornstarch.
- Toss the broccoli, pepper and onion with olive oil and salt on a second sheet pan.
- Roast both pans 25 minutes, flipping once, until the tofu is golden and crisp and the vegetables are caramelized at the edges.
- Whisk the hoisin with rice vinegar and a splash of water into a thin glaze.
- Serve the rice topped with tofu and vegetables, drizzled with the glaze.
Serve with: brown rice and a drizzle of sriracha mayo.
Pressing the tofu for at least 15 minutes is the difference between crisp and soggy — do not skip it.
