Chicken Fajitas
Sizzling strips of chili-lime chicken with charred peppers and onions — a loud, fast, crowd-pleasing pan dinner.
Ingredients
- 1½ boneless, skinless chicken breasts (1.5 lb), sliced into thin strips
- 2 tbsp olive oil, divided
- 1 tbsp lime juice, freshly squeezed
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- 1 tsp kosher salt
- ½ tsp black pepper
- 3 bell peppers (mixed colors), sliced
- 1 onion, sliced
- 3 garlic cloves, minced
Steps
- Toss the chicken with half the olive oil, lime juice, chili powder, cumin, paprika, salt and pepper.
- Heat a large skillet or cast-iron pan over high heat. Sear the chicken in a single layer, 3-4 minutes per side, until cooked through to 165°F. Transfer to a plate.
- Add the remaining oil to the same pan and cook the peppers and onion over high heat for 4-5 minutes, until charred at the edges but still crisp.
- Stir in the garlic for 30 seconds, then return the chicken to the pan and toss everything together for 1 minute.
- Serve immediately with warm tortillas and toppings.
Serve with: warm flour tortillas, sour cream, guacamole, salsa and shredded cheese.
A ripping-hot pan is what makes fajitas sizzle instead of steam: if the pan is not hot enough, the peppers go soft and the chicken goes pale.
