Classic Caesar Salad
Crisp romaine, crunchy homemade croutons and a creamy, garlicky dressing with real anchovy and Parmesan — the Caesar as it should be.
Ingredients
- 2 romaine hearts, chopped
- 2 cup bread cubes (from day-old bread)
- 3 tbsp olive oil, divided
- ½ tsp garlic powder
- ½ cup mayonnaise
- ¼ cup grated Parmesan cheese, plus more for serving
- 2 tbsp lemon juice, freshly squeezed
- 1 tbsp Dijon mustard
- 2 tsp Worcestershire sauce
- 2 anchovy fillets, minced, or 1 tsp anchovy paste
- 1 garlic clove, minced
- ½ tsp black pepper
Steps
- Heat the oven to 375°F. Toss the bread cubes with 2 tablespoons olive oil and the garlic powder, spread on a sheet pan and bake 8-10 minutes until golden and crisp.
- Whisk the mayonnaise, Parmesan, lemon juice, Dijon, Worcestershire, anchovy, minced garlic, remaining olive oil and black pepper into a creamy dressing. Thin with a teaspoon of water if needed.
- Toss the romaine with most of the dressing in a large bowl.
- Top with croutons and extra Parmesan and serve immediately, before the croutons soften.
Serve with: grilled chicken or shrimp to make it a meal, plus crusty bread.
Dress the salad just before serving — Caesar waits for no one, and dressed romaine wilts in minutes.
