Garlic Butter Salmon with Asparagus
A golden salmon fillet bathed in garlic butter, with roasted asparagus on the side — rich, fast and firmly keto.
Ingredients
- 1½ lb salmon fillets, skin on
- 4 tbsp unsalted butter
- 4 garlic cloves, minced
- 1 tbsp lemon juice
- 1 lb asparagus, trimmed
- 1 tbsp olive oil
- ¾ tsp kosher salt
- ¼ tsp black pepper
- 2 tbsp fresh parsley, chopped
Steps
- Pat the salmon fillets very dry and season with half the salt and pepper.
- Toss the asparagus with olive oil and the remaining salt, then roast at 425°F for 10-12 minutes until tender-crisp.
- Meanwhile, sear the salmon skin-side down in a hot oiled skillet for 4-5 minutes, until the skin is crisp.
- Flip and cook 2-3 minutes more, until just opaque in the center.
- Melt the butter in the same skillet with the garlic and lemon juice, spooning it over the salmon for 1 minute.
- Serve the salmon with the asparagus, drizzled with the garlic butter and scattered with parsley.
Serve with: roasted asparagus and a lemon wedge.
Pull the salmon at 125°F for silky flesh; carryover heat finishes it while it rests.
