Zucchini Lasagna
Layers of zucchini, meat sauce and three cheeses — all the comfort of lasagna, none of the pasta.
Ingredients
- 3 medium zucchini, sliced lengthwise
- 1 lb ground beef
- 2 cups no-sugar-added marinara sauce
- 1½ cups whole-milk ricotta
- 2 cups shredded mozzarella
- ½ cup grated parmesan
- 1 large egg
- 2 tsp Italian seasoning
- 3 garlic cloves, minced
- 1 tbsp olive oil
- 1 tsp kosher salt
Steps
- Salt the zucchini slices, rest 15 minutes, then pat very dry.
- Brown the beef with the garlic in olive oil, breaking it up, about 8 minutes. Stir in the marinara and Italian seasoning.
- Mix the ricotta with the egg and half the parmesan.
- Heat the oven to 375°F. Spread a thin layer of meat sauce in a 9×13″ dish.
- Layer zucchini, ricotta mixture, meat sauce and mozzarella, repeating twice.
- Top with the remaining mozzarella and parmesan, cover with foil and bake 25 minutes.
- Uncover and bake 15 minutes more until bubbling and golden. Rest 10 minutes before slicing.
Serve with: a crisp green salad.
Salt and drain the zucchini slices first, or the lasagna goes watery.
