Creamy Tuscan Chicken
Chicken thighs in a garlicky cream sauce with spinach and sun-dried tomatoes — the kind of one-pan dinner that tastes like a restaurant plate.
Ingredients
- 1½ lb boneless, skinless chicken thighs
- 2 tbsp olive oil
- 4 garlic cloves, minced
- 1 cup heavy cream
- ½ cup grated parmesan
- ½ cup sun-dried tomatoes in oil, drained and sliced
- 3 cups baby spinach
- 1 tsp Italian seasoning
- 1 tsp kosher salt
- ½ tsp black pepper
Steps
- Season the chicken thighs with salt, pepper and Italian seasoning.
- Sear in olive oil over medium-high heat, 5-6 minutes per side, until golden. Remove to a plate.
- Soften the garlic in the same pan for 30 seconds, then pour in the cream and scrape up the browned bits.
- Stir in the parmesan until melted, then add the sun-dried tomatoes.
- Return the chicken to the pan and simmer 8-10 minutes until cooked through.
- Fold in the spinach until just wilted and serve hot.
Serve with: cauliflower mash or zucchini noodles.
Use full-fat cream; light cream can split in a hot sauce.
