Lemon Butter Baked Cod
Mild, flaky cod under a lemon-butter blanket with garlic and herbs — a gentle, foolproof fish dinner for nights when salmon feels too rich.
Ingredients
- 1½ lb cod fillets, about 1 inch thick
- ¾ tsp kosher salt
- ¼ tsp black pepper
- 4 tbsp unsalted butter, melted
- 3 garlic cloves, minced
- 2 tbsp lemon juice
- 1 tsp lemon zest
- 1 tbsp fresh parsley, chopped
Steps
- Heat the oven to 400°F. Pat the cod dry, season with salt and pepper, and place in a baking dish.
- Whisk the melted butter, garlic, lemon juice and zest, and pour over the fish.
- Bake 15-18 minutes, until the fish flakes easily and reads 145°F in the thickest part.
- Spoon the pan butter over the fish, scatter parsley and serve.
Serve with: roasted potatoes, green beans and rice.
Cod thickness decides the time more than weight does — a 1.5-inch fillet needs a few extra minutes over a 1-inch one.
