Lemon Herb Grilled Chicken
Bright lemon, garlic and herbs on the grill: thin-sliced chicken breasts that cook fast, stay juicy and go with almost anything.
Ingredients
- 4 boneless, skinless chicken breasts (about 1.5 lb total), sliced horizontally into thin cutlets
- 3 tbsp olive oil
- 2 tbsp lemon juice, freshly squeezed
- 1 tsp lemon zest
- 3 garlic cloves, minced
- 1 tsp dried oregano
- 1 tsp kosher salt
- ½ tsp black pepper
- 2 tbsp fresh parsley, chopped
Steps
- Whisk the olive oil, lemon juice, lemon zest, garlic, oregano, salt and pepper.
- Toss the chicken cutlets in the mixture and let stand at room temperature while the grill heats, about 10 minutes.
- Heat the grill to medium-high and oil the grates.
- Grill the cutlets 5-7 minutes per side, until grill-marked and cooked through to 165°F.
- Rest 5 minutes, scatter with parsley and serve with lemon wedges if you like.
Serve with: grilled vegetables, rice pilaf or a Greek salad.
Thin cutlets are the trick: a full-thickness breast dries out on the outside before the center is done, while a cutlet grills evenly in minutes.
