Shakshuka
Eggs poached in a rich, spiced tomato and pepper sauce — a one-pan breakfast that doubles as a lazy weekend brunch centerpiece.
Ingredients
- 2 tbsp olive oil
- 1 onion, diced
- 1 red bell pepper, diced
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp smoked paprika
- ¼ tsp red pepper flakes
- 1 can crushed tomatoes (28 oz)
- 1 tsp kosher salt
- ½ tsp black pepper
- 4 eggs
- ¼ cup crumbled feta cheese
- 2 tbsp fresh parsley or cilantro, chopped
Steps
- Heat the olive oil in a large oven-safe skillet over medium heat. Cook the onion and bell pepper 6-7 minutes until softened.
- Add the garlic, cumin, paprika and red pepper flakes and cook 1 minute until fragrant.
- Pour in the crushed tomatoes, season with salt and pepper, and simmer 10 minutes until slightly thickened.
- Make 4 wells in the sauce and crack an egg into each.
- Cover and cook 7-9 minutes, until the whites are set but the yolks are still soft.
- Top with feta and herbs and serve straight from the pan.
Serve with: warm pita or crusty bread for scooping up the sauce.
If the yolks set before the whites do, pop the skillet under the broiler for 1-2 minutes — watch it closely.
