Spaghetti Bolognese
A slow-simmered meat sauce with carrot, celery and tomato — deeply savory, make-ahead friendly and the one pasta sauce worth the hour.
Ingredients
- 16 oz spaghetti
- 1 tbsp olive oil
- 1 onion, finely diced
- 2 carrots, finely diced
- 2 celery stalks, finely diced
- 3 garlic cloves, minced
- 1½ lb ground beef
- 2 tbsp tomato paste
- 28 oz crushed tomatoes (1 can)
- 1 cup beef broth
- 1 tsp dried oregano
- 1 tsp kosher salt
- ½ tsp black pepper
Steps
- Heat the olive oil in a large pot over medium heat. Cook the onion, carrots and celery for 8 minutes until softened.
- Add the garlic and cook 1 minute, then add the ground beef, breaking it up, until browned, about 6 minutes.
- Stir in the tomato paste and cook 2 minutes, then add the crushed tomatoes, broth, oregano, salt and pepper.
- Simmer uncovered on low for 35-40 minutes, stirring occasionally, until thick and rich.
- Meanwhile, cook the spaghetti in salted water until al dente and drain.
- Toss the pasta with the sauce and serve with Parmesan.
Serve with: grated Parmesan, garlic bread and a green salad.
The sauce tastes even better the next day. Make a double batch and freeze half for a fast future dinner.
