Baked Salmon with Lemon and Herbs
A whole salmon fillet baked with lemon, garlic and herbs until just flaky — the most forgiving way to cook salmon well.
Ingredients
- 1½ lb salmon fillet, skin on
- 2 tbsp olive oil
- 3 garlic cloves, minced
- 1 lemon, thinly sliced, plus 1 tbsp juice
- 1 tbsp fresh dill, chopped
- 1 tbsp fresh parsley, chopped
- ¾ tsp kosher salt
- ¼ tsp black pepper
Steps
- Heat the oven to 400°F. Line a baking sheet with parchment and lay the salmon skin-side down.
- Rub with olive oil, garlic, lemon juice, salt and pepper. Top with lemon slices, dill and parsley.
- Bake 12-15 minutes, until the thickest part flakes easily and reads 125-130°F for silky salmon (145°F per USDA).
- Rest 5 minutes, then serve with the pan juices spooned over.
Serve with: roasted asparagus, rice pilaf and a lemon wedge.
Pull salmon a few degrees before your target — carryover heat finishes it, and overbaked salmon dries out fast.
