Baked Salmon Quinoa Bowl

Oven-baked salmon over quinoa with avocado and cucumber: a balanced bowl with healthy fats and plenty of protein.

Ingredients

  • 4 salmon fillets (about 1.5 lb total)
  • 1 tbsp olive oil
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 1 cup quinoa, rinsed
  • 2 cup water
  • 1 cucumber, diced
  • 1 avocado, sliced
  • 2 cup baby spinach
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp honey
  • 1 tsp grated fresh ginger

Steps

  1. Heat the oven to 400°F. Cook the quinoa in the water as on the package, about 15 minutes, then fluff.
  2. Place the salmon on a lined sheet pan, brush with olive oil and season with salt and pepper.
  3. Bake 12-15 minutes, until the salmon flakes easily and reads 125-130°F for a silky center or 145°F fully cooked.
  4. Whisk the soy sauce, rice vinegar, honey and ginger into a dressing.
  5. Divide the quinoa, spinach, cucumber and avocado among bowls, top with salmon and drizzle with dressing.
Serve with: steamed edamame and a drizzle of soy-ginger dressing.

Pull salmon a few degrees early: it keeps cooking from residual heat and dries out fast if left in the oven too long.
