Chicken Veggie Stir-Fry
Thin-sliced chicken and a rainbow of vegetables in a light soy-ginger sauce, on the table faster than takeout.
Ingredients
- 1 chicken breast (1.5 lb), sliced thin
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp vegetable oil
- 2 bell peppers, sliced
- 2 cup broccoli florets
- 1 cup snap peas
- 2 carrots, julienned
- 3 garlic cloves, minced
- 1 tbsp grated fresh ginger
- 2 tbsp oyster sauce
- 1 tbsp honey
- 1 tsp cornstarch mixed with 2 tbsp cold water
Steps
- Toss the chicken with 1 tablespoon of the soy sauce and the sesame oil.
- Heat the vegetable oil in a large wok or skillet over high heat. Sear the chicken 4-5 minutes until cooked through, then set aside.
- Add the peppers, broccoli, snap peas and carrots and stir-fry 3-4 minutes until crisp-tender.
- Add the garlic and ginger and cook 30 seconds until fragrant.
- Return the chicken to the pan with the remaining soy sauce, oyster sauce and honey. Stir in the cornstarch slurry and toss 1 minute until the sauce thickens and glazes everything.
Serve with: steamed brown rice or cauliflower rice.
Keep the pan very hot and do not crowd it: vegetables cooked in batches stay crisp instead of steaming.
