Breakfast Burrito
Fluffy scrambled eggs, crispy potatoes, sausage and melted cheese wrapped tight — the grab-and-go breakfast that actually satisfies.
Ingredients
- 8 eggs
- ¼ cup milk
- ½ breakfast sausage (8 oz), casings removed
- 2 medium potatoes, diced small
- 2 tbsp vegetable oil
- 1 cup shredded cheddar cheese
- 4 large flour tortillas
- ½ tsp kosher salt
- ¼ tsp black pepper
- ½ cup salsa
Steps
- Cook the diced potatoes in the oil in a large skillet over medium-high heat, 8-10 minutes, until crisp and golden. Season with salt and pepper and set aside.
- Brown the sausage in the same skillet, breaking it up, 5 minutes. Drain excess fat.
- Whisk the eggs with milk, salt and pepper. Pour into the skillet over medium-low heat and scramble gently until just set, about 3 minutes.
- Warm the tortillas so they fold without cracking.
- Layer eggs, sausage, potatoes, cheese and salsa down the center of each tortilla, fold in the sides and roll up tightly.
- Toast each burrito seam-side down in a dry skillet for 1-2 minutes to seal.
Serve with: salsa and hot sauce on the side.
Keep the eggs slightly underdone before wrapping: they finish cooking from residual heat and stay creamy instead of rubbery.
