Classic French Toast
Custardy centers, golden buttery crusts: the diner classic, best made with day-old bread that soaks without falling apart.
Ingredients
- 8 thick slices of day-old brioche or challah
- 3 eggs
- ¾ cup whole milk
- 1 tbsp sugar
- 1 tsp vanilla extract
- ½ tsp ground cinnamon
- ¼ tsp kosher salt
- 2 tbsp butter, for the pan
Steps
- Whisk the eggs, milk, sugar, vanilla, cinnamon and salt in a shallow dish.
- Soak each slice 20-30 seconds per side — long enough to absorb, not so long it falls apart.
- Melt butter in a large skillet over medium heat.
- Cook the slices 2-3 minutes per side until deep golden and slightly puffed.
- Serve immediately with maple syrup and berries.
Serve with: maple syrup, powdered sugar and sliced strawberries.
Day-old bread is essential: fresh bread soaks too fast and turns soggy in the pan.
