Fluffy Buttermilk Pancakes
Tall, tender pancakes with crisp golden edges — the classic weekend stack, made with buttermilk for extra lift.
Ingredients
- 2 cup all-purpose flour
- 2 tbsp sugar
- 2 tsp baking powder
- ½ tsp baking soda
- ½ tsp kosher salt
- 2 cup buttermilk
- 2 eggs
- 3 tbsp melted butter, plus more for the pan
- 1 tsp vanilla extract
Steps
- Whisk the flour, sugar, baking powder, baking soda and salt in a large bowl.
- In a second bowl, whisk the buttermilk, eggs, melted butter and vanilla.
- Pour the wet ingredients into the dry and stir just until combined — a few lumps are fine.
- Rest the batter 5 minutes while a buttered skillet heats over medium heat.
- Ladle 0.33 cup of batter per pancake and cook 2-3 minutes, until bubbles appear on the surface and the edges look set.
- Flip and cook 1-2 minutes more until golden. Keep warm in a low oven while you finish the batch.
Serve with: maple syrup, butter and fresh berries.
Overmixing is the number one cause of flat, tough pancakes — stop stirring as soon as the flour disappears.
