Garlic Butter Steak Bites
Sirloin cut into cubes, seared hard in a screaming-hot pan and tossed in garlic butter — a 20-minute dinner that tastes like steakhouse cooking.
Ingredients
- 1½ sirloin steak (1.5 lb), cut into 1-inch cubes
- 1 tsp kosher salt
- ½ tsp black pepper
- 1 tbsp olive oil
- 3 tbsp unsalted butter
- 4 garlic cloves, minced
- 1 tsp soy sauce
- 2 tbsp fresh parsley, chopped
Steps
- Pat the steak cubes very dry and season with salt and pepper.
- Heat the olive oil in a large cast-iron skillet over high heat until it just starts to smoke.
- Sear the steak in a single layer, 2 minutes per side, until deeply browned. Work in two batches so the pan stays hot.
- Return all the steak to the pan, reduce the heat to medium and add the butter, garlic and soy sauce.
- Toss for 1 minute until the butter foams and coats the steak. Scatter with parsley and serve immediately.
Serve with: mashed potatoes, rice or crusty bread, plus roasted broccoli.
Dry steak and a single layer are non-negotiable: wet or crowded cubes steam gray instead of searing brown.
