Slow-Cooker Pulled Pork
Pork shoulder, a simple spice rub and a slow cooker: 8 hours later it shreds with a fork and feeds a crowd.
Ingredients
- 1 boneless pork shoulder (4 lb), trimmed of excess fat
- 2 tbsp brown sugar
- 1 tbsp smoked paprika
- 2 tsp kosher salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 cup chicken broth
- ½ cup barbecue sauce, plus more for serving
- 1 tbsp apple cider vinegar
Steps
- Mix the brown sugar, paprika, salt, pepper, garlic powder and onion powder. Rub all over the pork.
- Place the pork in the slow cooker and pour the broth around it, not over the rub.
- Cover and cook on LOW for 8 hours or HIGH for 4-5 hours, until the meat shreds easily with a fork.
- Lift the pork out and shred it with two forks, discarding any large pieces of fat.
- Skim fat from the cooking liquid, then toss the shredded pork with the barbecue sauce, vinegar and a few spoonfuls of the cooking liquid to keep it moist.
- Serve piled on buns with extra sauce on the side.
Serve with: hamburger buns, coleslaw, pickles and baked beans.
Do not lift the lid to check on it: each peek adds 20-30 minutes to the cook time.
