Turkey Taco Lettuce Cups
Seasoned ground turkey piled into crisp lettuce leaves: all the taco flavor, none of the heavy shell.
Ingredients
- 1 ground turkey (1 lb)
- 1 tbsp olive oil
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- ½ tsp kosher salt
- 1 head of butter lettuce or romaine, leaves separated
- 1 cup diced tomatoes
- ½ cup shredded cheddar cheese
- ¼ cup sour cream or Greek yogurt
- 1 lime, cut into wedges
Steps
- Heat the olive oil in a large skillet over medium-high heat. Cook the onion 3 minutes until softened.
- Add the garlic and ground turkey, breaking it up with a spoon, and cook 7-8 minutes until browned.
- Stir in the chili powder, cumin, paprika and salt, and cook 1 minute more.
- Spoon the turkey into the lettuce leaves.
- Top with tomatoes, cheese and a dollop of sour cream, and finish with a squeeze of lime.
Serve with: salsa, lime wedges and a small bowl of black beans.
Double up the lettuce leaves for each cup if the filling is hot and juicy — two leaves hold up much better than one.
